Makes one moist, delicious 9-inch cake
1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
3-4 tablespoons cocoa powder
1 teaspoon vanilla
1 tablespoon white vinegar
5 tablespoons vegetable oil
1 cup water
Preheat the oven to 350.
Sift or whisk the dry ingredients together.
Make 3 wells in the resulting mound, and put the vanilla in
one, vinegar in another, and oil in the third. Pour the water over and mix it
on up, as little as possible to get most of the lumps out.
Transfer to a greased and floured pan and bake. Check after 25
minutes; it might need another few depending on the pan.
Joyously enough, this recipe easily doubles to make a layer
cake.
Simple yet lovely fudgy
frosting for 1 double layer cake
1/2 cup Earth Balance (if you haven't had it, it'll make you say goodbye to
butter!)
1/3 cup plain or vanilla soymilk
1 tsp vanilla
2/3 cup cocoa powder
3 cups powdered sugar
Melt the Earth Balance, then add soymilk and vanilla. Whisk in cocoa and
sugar. Add more sugar or milk for desired texture.
